In this day and age we are all so busy. It's hard to get in all of the vital nutrients needed to round out one's nutritional needs. But, let's be clear.....we all need our vitamin c. I mean, who wants to have a bout with Scurvy? You know, that atrocious disease attributed to pirates and sailors? Yes, I am talking about that one. So, I am going to gift you with a recipe for Lemon Bars that are chock full of vitamin c.
Make it and eat the whole pan. Because, seriously, who wants to look like a pirate?
First, let's make the crust. You will need two sticks of softened butter, 1/2 cups powdered sugar, and two cups of flour. Mix together well and press into a 9x9 inch pan. Bake at 325 degrees for approximately 30 minutes, until the dough is golden brown.
Then, we get to my favorite part, the filling. Combine four eggs, two cups of sugar, four tbsp flour,four tbsp fresh lemon juice, and some grated lemon zest. I used about one tbsp of zest.
Mix the filling ingredients well.
Pour the filling over the slightly cooled crust. Place the concoction back into the oven and bake for twenty-five minutes, until golden brown on top. Don't overcook, the bars should be soft.
The crust is a bit sweet and the filling is high in citrus flavor.
Despicably good.
The title sure caught my attention...Scurvy, maybe that's why I have been feeling ill..yes, it must be, a batch of this vitamin C packed recipe and all will be well! Hahahaha! Great post! xo

You don't have to do that. I like to come over here just to boogie down. It just doesn't work to boogie to Stevie Wonder and chew your fingers.. I made a lime ice box pie yesterday. It is gone. There is a 12 year old boy in the house who would like to eat the whoe pie but since there is only one he ALMOST eats it all. There was like to skinny pieces left.
